Blackberry cupcakes
Ingredients:
- 6oz soft butter
- 6oz caster sugar
- 6oz self raising flour (sifted)
- ½ tsp baking powder (sifted)
- 3 eggs
- couple of handfuls of blackberries
Method:
Cream together the butter and sugar and add the eggs one at a time, beating well.
Fold in the flour and baking powder.
Add the blackberries or other similar fruit, I use blackberries because we have a glut of them every year!
Spoon the mixture into cake cases. Make sure the fruit is covered by the batter or it with burn
Put in the oven at 170° for 15-20 minutes.
