Blackberry trifle
A lovely trifle packed with freshly picked blackberries from my garden. I am always trying to include these beautiful fruits that are full of goodness into my recipes. I have used ready made custard in mine but you can make your own if you wish but you will need to remove the skin that will form when cooled.
Ingredients:
- Lots of blackberries
- Lots of fresh cream
- sachet of blackberry or blackcurrant powdered jelly
- can/carton of custard
- madeira cake
Method :
Wash all the blackberries well. I usually place them in a bowl full of water for 10 minutes before I start then rinse them by placing in a colander under a running cold tap. It gets rid off all the fine hairs that grow around the fruit, then leave to drain well.
Make the jelly as per the instructions and leave to semi set, you don’t want it to go hard enough to stand a spoon in you just need it to be like cream before its been whipped.
Choose your dishes, individual or one big one. I chose 3 tall glasses and 3 sundae dishes.
Cut the cake into chunks and add a few to each dish, then add your fruit. Pour the semi set jelly over the top and put in the fridge to finish off the setting process.
Then spoon on the custard, sharing it equally between the dishes. You need to make sure that you cover the fruit with the custard to stop the fruit going brown, so spread it right to the edge of the glasses.
Finally, just before serving, whip up the cream and dollop it on with even more fruit if required. I never put the cream on my trifle until its just about to be eaten.
