Chocolate cheesecake: (No bake)
Ingredients:
- 180g digestive biscuits
- 75g melted butter
- 100g melted milk chocolate
- 300g cream cheese
- 200ml double cream
- 75g icing sugar
Method:
Place the biscuits into a bag and crush with your hands and then finish off with a rolling pin until they are all crumbs. I use half chocolate and half regular digestives.
Pour into a dish and add the melted butter and mix well.
Place in a buttered dish (Its easier to use a pan with a loose bottom) and pat down well with the back of a spoon, making sure it’s nice and even.
Put into the fridge to set (I put mine in the freezer for 15 mins for quickness)
Mix the cream cheese, icing sugar and double cream and beat until smooth and thickish.
Melt the chocolate and cool and while it’s still runny quickly swirl through into the cheese mix and whip again if it’s not quite thick enough.
Spoon onto the crumb base and put in the fridge for at least an hour before eating.
Decorate if required
If you fancy a lemon cheesecake ……omit the chocolate and add the juice and grated zest of one lemon. Add 1tbsp lemon curd mixed with 1tbsp of warm boiled water and drizzle it over the top at the end. ?
