Fresh fruit cheesecake
Ingredients:
- 180g digestive biscuits
- 75g melted butter
- 300g cream cheese
- 200ml double cream
- 75g icing sugar
- Fresh fruit selection
Topping:
- 1 tbs lemon or orange curd
- heaped tbs icing sugar
Method:
Place the biscuits into a bag and crush with your hands and then finish off with a rolling pin until they are all crumbs.
Pour into a dish and add the melted butter and mix well.
Place in a buttered dish (Its easier to use a pan with a loose bottom) and pat down well with the back of a spoon, making sure it’s nice and even.
Put into the fridge to set (I put mine in the freezer for 15 mins for quickness)
Mix the cream cheese, icing sugar and double cream and beat until smooth and thickish.
Spoon onto the crumb base and put in the fridge for at least an hour before eating.
Meanwhile, get a large tablespoon of lemon or orange curd and add a large tablespoon of icing sugar. Mix well with 2-3 teaspoons of warm water so it’s thick but runny.
Pour into the centre of the cake and spread it to the edge all around. Then top with chopped fresh fruit. I used pineapple clementines and grapes that I had removed all the skins. It is absolutely delicious ?
