Luxury Rock cakes

This recipe was gratefully received and has been tried and tested by myself, my family and my neighbour. We are all in agreement that they are the best rock cakes…….ever! They were delicious! I made 8 as suggested but I should have made a double batch. I was advised by Jacquie that they would keep nice and fresh in an airtight plastic container? No need………all I have left on the plate is crumbs!!!

 

Ingredients :

  • 200g Self raising flour
  • 100g Soft margerine ( I used butter)
  •  50g Granulated sugar
  • 2 tsp Baking powder
  • 1 tsp Mixed spice ( optional)
  • 150g Luxury mixed fruit
  • 1 large Egg
  • 1 tbsp Milk + 1 tsp if needed
  • 1 tsp Almond essence
  • 1 tbsp Demerara sugar

 

Method:

Preheat the oven to 200c / gas 6 and lightly grease a baking tray.

In a large mixing bowl, add the flour margarine baking powder and mixed spice ( if using).

Rub in the ingredients with your fingertips until the mixture resembles fine breadcrumbs. Add the granulated sugar and disrtibute evenly. Then add the dried mixed and mix.

In a mug, beat the egg with a fork, then beat in one tablespoon of milk and the almond essence. Now patiently combine the liquid with the cake mixture. It will be stiff. Add just one teaspoon more of milk if absolutely necessary.

Now using a spoon, dish out 8 rock cakes onto the baking tray.

Sprinkle the Demerara sugar over the tops.

Bake on the middle shelf for 15 mins or until the cakes are a golden colour

Place on a wire rack to cool before serving.

Jacquie’s tip – if you can’t find luxury mixed dried fruit, make your own with ordinary mixed dried fruit, 25g glacé  cherries 25g currants.

  2. These rock cakes are,’ Simply the best better than all the rest.’ I added cranberries and ground pistachio nuts to the recipe. Many many thanks and keep coming up with more recipes.

  3. Mine went flat and very crumbly. What did I do wrong?

  4. Made the mixture as I have done before this time they went flat still tasted nice but as a cake the only difference the last time I used an electric oven now I have a new gas cooker

  6. Love this recipe,haven’t made rock cakes for years ,turned out delicious,my husband had three in one hit.
    I didn’t have any luxury mixed fruit left so I used sultanas,mixed peel and flaked almonds in mine,I was thinking perhaps the next batch I will add some dried cranberries as well.
    I forgot to mention I did not add the almond extract because my husband doesn’t like it ,I love it so I think next time I’ll make two separate batches.

  8. I made these rock cakes this evening and I think they are the best I have made .. My Grandmotherand my mother always made them for tea on a Sunday
