Rhubarb & apple crumble
This crumble is for a large family size recipe, I have a glut of rhubarb growing in the garden at the moment so needed to use up a few sticks! But it wont take too long to eat by my family….and best friend & neighbour! Its such a simple but filling dessert and you don’t have to stop at rhubarb you can add any berries to go with the apples. Serve with custard, cream or ice cream or just as nice naked! This is a ‘flexible’ recipe, add as much as you like of the fruit but reduce/increase the sugar accordingly, but remember more sugar = more syrup!

Ingredients:
For the filling
- 5 med cooking apples
- 5 sticks rhubarb
- 50g granulated sugar
For the crumble:
- 300g Plain flour
- 180g butter
- 120g sugar
Method:
Preheat the oven to 180° /FAN 160 /GAS 4
Put flour and sugar in a bowl add chopped butter. Using finger tips rub until mixture resembles breadcrumbs.
Peel wash and chop the rhubarb and put in a large baking dish. Peel and slice the apples and add these to the bowl.
There is no need to boil the fruit first or faff about with it, just mix it up with your hands and add the sugar evenly all over.
Then put the crumble mix evenly over the top and place in the oven and bake for 35 -40 mins until golden brown. Tada!! enjoy xx
