Roasted vegetables:

- 3 parsnips
- 4 carrots
- 3 red onions
- 4 leeks
- 2 sweet potatoes
- 2 tbs oil ( I use rapeseed oil)
- salt
I love roasted vegetables, I could personally eat them with every meal! and so easy and incredibly tasty. This is your 5 a day in one helping! Roasting the carrots makes them taste so lovely and sweet, I found that these vegetables make a perfect balance for your taste buds.
Peel, cut wash and chop all of the vegetables and place them into a large ovenproof dish, sprinkle with salt (not too much) and then drizzle whatever oil you will be using all over . Stir up the veggies so each has a coating of oil and put into a hot oven 200° on the bottom shelf for 20 minutes. Give them a stir so the bottom veggies go to the top and put back in the oven on the middle shelf and turn the oven down to 170°. Cook for another 20minutes, stirring once more before and replacing for a final 10 mins.
