Cauliflower & Apple
This is one of my favourite soups, a James Martin special! I was in hospital when I first tried it and James had recently done a TV series about changing hospital food for the better. It certainly made my stay in Scarborough Hospital a whole lot better! When I first saw it on the menu, I hesitated in ordering it because I wasn’t sure cauliflower and apple would taste very nice but oh my, how wrong can a person be….it was incredibly good! Ingredients:
- 2tbs olive oil
- 50g butter
- 200g thinly sliced onion
- 700g very thinly cauliflower
- 2 cox’s Apple cored and peeled
- 2 vegetable stock cubes
- 1¼ pint milk
- 1¼ boiled water
- Salt & pepper to taste
Method:
Heat the olive oil & butter in a large pan that has a lid then add the onions, cover and fry for about 10 minutes on a low heat.
Add the cauliflower and cover again for another 10 minutes.
Add the remaining ingredients and bring to the boil then simmer with the lid on for another 10 minutes.
Allow to cool a little and then blitz with a blender and do a taste test adding more seasoning if required.
Then sit down with a chunk of freshly baked bread and a bowl of this gorgeous soup and enjoy!
